The Garlic Extract is allicin. The component is diallyl sulfide (CH2=CHCH2)2S3, which is an extremely unstable organic sulfide that is easily degraded. Under normal temperature (20 °C), it is almost completely degraded after 20 hours, and it degrades faster upon heating. Allicin is very unstable, so allicin extraction and preservation are very difficult.
